Executive Pastry Chef – Manager (PSU0438)
Job Summary
The Executive Pastry Chef / Bakery Operations Manager is responsible for the long-term vision and strategic planning for the Penn State Bakery; leads the management, development, and training of staff and ensures that all government health regulations, industrial safety standards, corporate and departmental policies, and Bargaining Agreement requirements are followed; oversees the daily preparation and production of desserts, breads, and pastries that are delivered to all University facilities; creates, develops, and tests new recipes and baking techniques to be integrated into menus for dining, online sales, fine dining, and high-end catering.
Representative Duties
- Lead the overall operation of the Penn State Bakery
- Direct the research, development, and standardization of all bakery recipes and procedures; lead menu development and product innovation
- Develop and implement strategic plans to increase bakery sales and customer satisfaction; research new trends; collaborate on marketing plan
- Meet with customers and stakeholders to customize products and menus; participate in menu committees and food advisory boards
- Determine and establish bakery product pricing and nutritional information
- Maintain and enforce production, quality, sanitation, and safety standards
- Manage financial progress and actively monitor labor costs, cost of goods, and other expenses
- Keep abreast of regulatory requirements; develop operational changes, policies, and procedures; ensure compliance
- Investigate and resolve problems related to internal and external customer service, product quality, and personnel performance
- Research and purchase new bakery equipment; oversee existing equipment preventative maintenance and repair
- Hire, train, coach, supervise, schedule, and evaluate employees; recommend, plan, and coordinate professional development opportunities; adhere to Collective Bargaining Agreement provisions; participate in grievance/arbitration proceedings

Salary Structure
- Comp Grade – 12
- Minimum – $76,700.00
- MidPoint – $95,900.00
- Maximum – $115,100.00
