Meat Lab Education Specialist – Intermediate Professional (PSU0027)
Job Summary
The Meat Lab Education Specialist is responsible for supporting teaching, research, and extension activities within the Meat Laboratory and in the production of meat and meat products; ensure food and employee safety; serve as a liaison with the U.S. Department of Agriculture (USDA) for all processing procedures; oversee the sanitation and maintenance of all equipment and rooms covered by the USDA inspection program.
Representative Duties
- Collaborate in the planning and development of educational programs, research, and extension for the Meat Laboratory
- Supervise the slaughter, cutting, and processing of products used for teaching and research
- Plan the use and sale of meat products
- Provide input on the purchase of supplies and equipment; oversee inventory; notify appropriate personnel regarding maintenance, repair, and replacement needs
- Participate in the budget planning process
- Work closely with the physical plant and/or external contractors to plan and schedule building maintenance, renovation projects, and facility upgrades
- Participate in the development and implementation of standard operating procedures
- Liaise with regulatory personnel for compliance of cleaning and sanitation procedures; advise support personnel on appropriate regulations and proper use of tools and equipment
- Maintain documentation and records in accordance with compliance protocols
- May partner with outside agencies to complete necessary audits
- Participate in the development and implementation of outreach programs, short courses, the annual convention, and research projects
- Engage in marketing activities to increase sales and profitability of new and existing meat products
- Coordinate and summarize the collection of research data in accordance with approved project protocol
- May guest lecture and teach labs for Animal Science and Food Science classes
- May supervise staff members, including hiring, development, and performance management

Salary Structure
- Comp Grade – 6
- Minimum – $42,100.00
- MidPoint – $51,600.00
- Maximum – $61,000.00
