Job Summary

The Meat Lab Education Specialist is responsible for supporting teaching, research, and extension activities within the Meat Laboratory and in the production of meat and meat products; ensure food and employee safety; serve as a liaison with the U.S. Department of Agriculture (USDA) for all processing procedures; oversee the sanitation and maintenance of all equipment and rooms covered by the USDA inspection program.

Representative Duties

  • Collaborate in the planning and development of educational programs, research, and extension for the Meat Laboratory
  • Supervise the slaughter, cutting, and processing of products used for teaching and research
  • Plan the use and sale of meat products
  • Provide input on the purchase of supplies and equipment; oversee inventory; notify appropriate personnel regarding maintenance, repair, and replacement needs
  • Participate in the budget planning process
  • Work closely with the physical plant and/or external contractors to plan and schedule building maintenance, renovation projects, and facility upgrades
  • Participate in the development and implementation of standard operating procedures
  • Liaise with regulatory personnel for compliance of cleaning and sanitation procedures; advise support personnel on appropriate regulations and proper use of tools and equipment
  • Maintain documentation and records in accordance with compliance protocols
  • May partner with outside agencies to complete necessary audits
  • Participate in the development and implementation of outreach programs, short courses, the annual convention, and research projects
  • Engage in marketing activities to increase sales and profitability of new and existing meat products
  • Coordinate and summarize the collection of research data in accordance with approved project protocol
  • May guest lecture and teach labs for Animal Science and Food Science classes
  • May supervise staff members, including hiring, development, and performance management

Salary Structure
  • Comp Grade – 6
  • Minimum – $42,100.00
  • MidPoint – $51,600.00
  • Maximum – $61,000.00
